Savigny-lès-Beaune, Burgundy wines with character

With some 350 hectares of vineyards, Savigny-lès-Beaune is one of the largest wine-producing villages in the Côte de Beaune. Located in Burgundy, it produces red and white Village and Village Premier Cru wines. The reds are in the majority, with Chardonnay accounting for only 10% of production. Pinot Noir therefore reigns over this Burgundy AOC; it gives rise to wines of character and at reasonable prices for this prestigious sector of the vineyard.

General presentation of savigny-lès-beaune

The appellation area extends around the commune that gave it its name, Savigny-lès-Beaune. It is located in the north of the Côte de Beaune, in the continuation of the Côte de Nuits, between the capital of Burgundy wines, Pernand-Vergelesses and the Montagne de Corton.

The AOC produces mainly red wines; Pinot Noir alone accounts for more than 310 hectares of the vineyard, much of which is classified as Premier Cru. Chardonnay is grown on about 40 hectares; here too, several parcels are classified as Premier Cru.

Among the 22 Climats classified as Premier Cru, we can mention for example Les Hauts Marconnets, La Dominode, Les Vergelesses or Aux Clous. They are spread over the hillsides that frame the combe de Savigny-lès-Beaune.

Characteristics of a savigny-lès-beaune

The red Savigny-lès-beaune wines have a deep cherry-red colour, sometimes reminiscent of black tulips. It can be adorned with garnet reflections. The aromas are those of the pinot noir grape. These red wines open with a fruity bouquet of raspberry, cherry and blackcurrant. Violet gives a floral touch to the wine, which may also have notes of macerated stone fruit and liquorice. With age, it evolves towards undergrowth, humus and spices. Subtly tannic and full-bodied, a red savigny-lès-beaune is round, balanced and powerful. It can easily be kept for 5 to 10 years.

The white savigny-lès-beaune wines give a beautiful expression of the chardonnay. Behind a golden colour with emerald green reflections, we discover a floral nose marked by hawthorn. The aromas of fresh butter and brioche, and even bread and hazelnut, also give this white Burgundy wine its identity. The aromatic bouquet also has citrus accents, such as grapefruit and lemon. Lively, frank and fat, Savigny-lès-Beaune Blanc gives a clear, mineral and sometimes fleshy impression in the mouth. It can be aged for 4 to 8 years.

How to taste a savigny-lès-beaune

The red wines of the AOC savigny-lès-beaune are a natural accompaniment to meat, red or white: beef, roast poultry, lacquered or caramelised poultry, braised ham, game, roast veal, pan-fried foie gras.they also go well with milder cheeses, such as tomme, mont-d'or, brie de Meaux or reblochon. Preferably, serve a red savigny-lès-beaune at a temperature of 15-16°.

A savigny-lès-beaune blanc AOC is ideal for simple, gourmet dishes such as frog legs and Burgundy snails, as well as omelettes and scrambled eggs. It also goes well with fish and shellfish such as salmon, sole, turbot, lobster or crayfish. On the cheese platter, this white wine goes well with Gruyère, Comté or goat cheese. Enjoy this white wine from Savigny-lès-Beaune at a temperature of about 11-13°.

"Géré depuis 2001 par le duo sœur-frère Claude et François de Nicolay, celui-ci s'étend sur près de 14 hectares intégralement conduits en biodynamie depuis 2005. Les vinifications sont des plus traditionnelles : raisins entiers, températures de fermentation n'excédant pas 30°C, et pas ou très peu de bois neuf.
