One of the most impressive sweet wines of the region, the complexity is already there, with notes of apricot and spices. The liqueur is superbly digestible despite 270 grams of residual sugar, to be compared with the greatest successes of the Loire.

A full and frank confectionery wine of great originality.

Nose of candied fruits, quince, figs.
Great length in the mouth.

Cellaring: 10 to 15 years
Serving temperature: 7°C in summer, 9°C in winter

Grape variety: Ondenc
Terroir: Clay-limestone.
Cultivation: Planting density: 5,000 vines/ha pruned in goblet style.
Yields: 7 hl/ha. 4 bunches per vine are left after a green harvest at the end of July.
Grapes are harvested on the stump when ripe.
Harvesting: by hand. Bunches are placed on keys under tunnels, facing the Autan wind to accentuate the grape variety.
Vinification: Natural in vats after pressing. Native yeast.
Fermentation in vats and maturing for one year

All the vines are organically cultivated (AB certification) and pruned in gobelet, the traditional pruning of the vineyard.

La troisième génération maintient le cap. Les cépages sont vinifiés et mis en bouteille séparément.
