All the Plageoles vineyards are worked in organic (certified AB) and carved in Cup, traditional size of the vineyard.
Planting density: 5000 feet/ha carved in Cup.
Yields: 32 to 38 ha manual harvest
Vinification: Traditional fermentation.
Total Destemming. Pre-fermentation cold. 2 or 3 pumping-over and a possible punching.
Spontaneous fermentation, yeasts. Ageing in cement tank for 18 months.
