The colour is deep rubyred.
The nose is fine and balanced, with notes of very ripe black fruit, candied orange and hints of rose.
The mouth is silky and round. The tannins are coated. The aromatic persistence is long with a finish of orange zest.
LeDomaineGauby is among the best in Roussillon. Located about 20 km north of Perpignan, the vineyard covers 45 hectares. It benefits from a strong maritime influence and is situated at an altitude of between 150 and 200 metres. The terroir is complex and exceptional, in vertical strata, composed of limestone, marl and schist. This allows the vines to take deep root. In an environmental approach and respect for the vine, the cultivation of the vines is as natural as possible, without the use of chemical and synthetic products. Home-made preparations based on plants, essential oils and compost are used. Some of the vines on the estate are a remarkable 120 years old.
The La Foun cuvée is madefrom 100% old Carignan vines, over 120 years old. The vines are planted on schistose and clay-limestone soils.
The grapes are harvested by hand, in crates. The harvest is sorted on receipt in the cellar, then completely destemmed. The vinification is traditional. The vatting period lasts from 2 to 4 weeks. The alcoholic fermentation starts thanks to the indigenous yeasts naturally present on the grapes. The wine is aged for 30 months in casks and barrels. The wines are bottled without fining or filtration.
