Manual harvest in crates with sorting. Traditional vinification. Total de-stemming, maceration for 2 to 3 weeks. Indigenous yeasts. No enzyming, no chaptalisation, no acidification. Aging: 24 months in barrels.
The Gauby family, based in the commune of Calce, 20 km north-west of Perpignan, is the spearhead of the Roussillon wine industry. The Gauby estate covers approximately 85 hectares, 45 hectares of which are vines up to 120 years old and another 40 hectares of meadows, oak forests and garrigues with an incredible and unique aromatic complexity.
The environment of Domaine Gauby is still very well preserved, wild, arid, steep and hilly (up to 300 metres in altitude). It offers magnificent terroirs whose vertical strata allow the roots to plunge deep into the soil. Terroirs composed of limestone, marl and schist, components that are in some places intimately mixed.
Gérard Gauby's work consists of respecting the environment, taking nature as an ally and source of inspiration by referring to several cultures, leaving aside chemical and synthetic products and using "home-made" preparations (more than twenty) and other natural products such as essential oils, compost, etc.
This work allows Gérard to draw the quintessence of his terroirs and to seek elegance and freshness in his wines. The aim is to preserve the natural balance and to remain free to make his own choices. He is and will remain a farmer.
Explaining the "terroir" of Domaine Gauby in a few words is a bit like summarising the Bible in a few lines. To situate them, the terroirs of the estate (between 150 and 200 metres in altitude), dominate the sea to the east, about twenty kilometres away, and thus benefit from a significant marine influence. The sedimentary limestone to the north and the primary schist to the south are sometimes intimately mixed, arranged in vertical strata, allowing the vines to take deep root.
Created by Gérard Gauby, now supported by his son Lionel, the estate is now in biodynamic farming, and pursues its style with fine, precise and taut wines. The Domaine Gauby produces refined and balanced Côtes du Roussillon reds that age very well, as well as pure and mineral Côtes Catalanes Vins de Pays whites that express a superb aromatic freshness. Gauby wines are a must for lovers of the "Grands Crus" of Roussillon.
