Terroir : coulée de calcaire sur terroir de schistes.
Vinification et élevage : vendanges manuelles en caisse avec tri. Vinification traditionnelle. Eraflage en totalité, macération 2 à 3 semaines. Levures indigènes. Sans enzymage, sans chaptalisation, sans acidification. Elevage : 24 mois en barriques.
Accords mets/vin : viandes rouges, civets, sanglier.
