Ce Gauby Vieilles Vignes est puissant, charpenté et chaud. Superbe intensité au nez, sur les fruits noirs frais et notes de réglisse, senteurs de garrigue, d'épices. En bouche, sa magnifique structure tanique est epicée, riche et soyeuse avec une finale longue exquise. 

Terroir : coulée de calcaire sur terroir de schistes.

Vinification et élevage : vendanges manuelles en caisse avec tri. Vinification traditionnelle. Eraflage en totalité, macération 2 à 3 semaines. Levures indigènes. Sans enzymage, sans chaptalisation, sans acidification. Elevage : 24 mois en barriques.

Accords mets/vin : viandes rouges, civets, sanglier.

Gérard Gauby, the master of Calce, has been pursuing his path to excellence for some thirty years now. This emblematic figure and standard-bearer of the Roussillon revival masters all the complexity of the Roussillon terroirs like no other. With his son and his wife, they deliver vintage after vintage a style of wine that is pure, fresh, digestible and dense at the same time, with an exemplary balance and straightforwardness, whether in red or white.
