Cuvée 3A Grand Cru - Extra Brut
50% Avize, a village classified as a Grand Cru Chardonnay, located in the heart of the Côte des Blancs, a terroir where the purest chalk in Champagne is found, known as Belemnite, a fossil of shells deposited millions of years ago, which brings freshness and minerality, finesse to the wines which also have a nice presence in the mouth.
For this cuvée we have selected old vines over 50 years old and opted for a rigorous vinification in 225 litre oak barrels.
25% Aÿ, a village classified as a Grand Cru Pinot Noir, located on the border between the Marne Valley and the Montagne de Reims, is known as the "Grande Vallée de la Marne" terroir. The particular south-facing exposure and the uneven relief of the slopes allow the Pinot Noir to express the aromas of ripe fruit, and to combine power and finesse. This old vineyard is still made up of old Pinot Noir with small grains.
Historical village of the Champagne region, we find sedimentary and calcareous soils where the chalk is still strongly present.
25% Ambonnay, village classified as Grand Cru Pinot Noir, located in the Montagne de Reims, kingdom of Pinot Noir. The Montagne de Reims is a vast forest-covered plateau where vines are planted on chalky soils. The forest acts as a thermal regulator between the cold evening air that descends to the plain and the warm daytime air that rises to the summit.
We have chosen to keep our old vines, planted in the 1950s, with small yields but which give more maturity and concentration to the fruit.
Unlike Chardonnay, which is a fragile and delicate grape variety, Pinot Noir is a vigorous grape variety that adapts very well to chalky soils, producing wines that are characterised by their strength and consistency, well supported by a good structure. The aromas are very fine with those famous notes of red fruits.
Avize, Aÿ and Ambonnay are the only three villages classified as Grand Cru in Champagne whose first letter is an A. Hence the name given to this cuvée, but its originality lies more in its composition, 50% Avize Chardonnay, associated with 50% Pinots Noirs, from Aÿ and Ambonnay.
Two grape varieties, three Grands Crus which bring their own characteristics.
The colour is light gold with some copper highlights, well supported by a fine and intense bubble. The wine is thick and fat, a sign of great richness, and has a nice leg along the glass.
The nose is flattering with typical Chardonnay notes, such as lemon, pineapple and especially mango, enhanced by a buttery side brought by the oak barrel ageing. There are also notes of red fruits such as blackcurrant and raspberry, which are characteristic of Pinot Noir, as well as liquorice.
The winey side of the nose is reflected on the palate by the presence of the Pinot Noir which gives a velvety, unctuous and suave side, combined with the finesse, freshness and minerality of the Chardonnay.
