Les Acacias
Les Acacias est un vin puissant à la robe sombre, concentré, aux arômes toastés, grillés, épicés. En bouche, ce sont les fruits noirs qui dominent, sur des tanins bien présents et une finale étonnamment fraîche gourmande qui laisse présager un grand potentiel de garde.
Terroir : sols calcaires ferrugineux. Sommet de coteaux, 350 mètres d’altitude.
Vinification et élevage : vendanges manuelles. Vinification naturelle, égrappage, cuvaison 30 jours. Fermentation en cuves béton. Puis élevage en foudres durant 18 mois.
Accords mets/vin : cassoulet, jambon Madère, pavé de boeuf.
