Still a very pure style, a deep reflection of the clay-limestone soil of Jonquières. A great depth in this dense, well-structured red with rounded tannins. Black fruits, liquorice and very fresh notes, evolving with time towards more complex aromas: garrigue, leather, camphor, balsamic notes...

In this superb vintage, Terre de Jonquières combines the depth of 2010 with the refinement of 2016. A lovely nose of fruit and garrigue, enhanced by a hint of minerality. The palate is full, generous but elegant and dynamic, with a sovereign balance.

A blend of the terroirs of Jonquières, the historic cuvée of the Mas (previously called L'Infidèle) is composed with the five regional grape varieties. This blend of terroirs and grape varieties gives it its elegance and structure.

Its balance makes it accessible from its youth and its complexity is expressed over 10 years and more.

Grape varieties: Syrah 30% - Cinsault 20% - Grenache 10% - Mourvèdre 15% - Carignan 25%

Yield : 23 hl/ha

Terroir : The plots used for this cuvée cover 8ha, composed in equal parts of chalky gravel and clay-limestone. The average age of the vines is 35 years. The climate is cooled by the northern winds from the Causse du Larzac, which contribute to the freshness of the wines and balance out their Languedoc generosity.

Cultivation & Harvesting: Certified organic cultivation. Ploughing, organic amendments, controlled grassing, mechanical weeding (intercep), short pruning (gobelet for the carignans and part of the cinsaults, gobelet palissé for the other plots except for one Grenache in cordon de Royat), green harvesting (disbudding, leaf removal), no treatments based on synthetic molecules, biodynamic treatments. Manual harvesting, selection of grapes in the vineyard and on the sorting table in the cellar.

Vinification & Maturing: Vinification with indigenous yeasts, partially de-stemmed grapes, fermentation in stainless steel and concrete vats. Fermentation temperatures are controlled (starting at around 15°C then gradually rising to 25°C). Long vatting periods (20 to 35 days), punching down and

pumping over. Malolactic fermentation on indigenous bacteria in stainless steel tanks. Aging by grape variety and by plot, 12 months in 500 and 600 litre demi-muids (15% new and 85% from 1 to 10 wines) and

in oval tuns of 24 and 30 hl. Blending then additional ageing for 4 months in stainless steel vats before bottling. Stabilisation and clarification by time and cold.

It is both sensual, as any infidel should be, and serious, as any repentant should be, which is not antinomic here. The tannin is perfectly wrapped, the finish is exquisite. »

Beaucoup de rigueur et un soin méticuleux de la vigne à la bouteille, l'intelligence et la précision de la démarche, une idée très claire de ce qu'est le grand vin ont amené les rouges au sommet de la planète Languedoc.

Terre de Jonquières joue un registre à peine mineur par rapport à Combanolles, plus aérienne encore, portée par le grand assemblage languedocien (syrah, carignan, mourvèdre, grenache). Le pendant languedocien du grand château bordelais Léoville-Las-Cases serait ici.

La précision et la finesse des tannins est le point commun de ces cuvées. Les blancs continuent de progresser avec les cuvées l'étincelle et parole-de-pierres confondante de fraîcheur." 4*/5 Bettane+Desseauve
