The name of the cuvée "Les Combariolles" is the name of the eponymous terroir located halfway between Jonquières and Montpeyroux.
This cuvée is the result of a plot selection on the Combariolles terroir (very high quality limestone) which gives it the depth and complexity typical of the great reds of the South with a distinctive mineral vibration. The blend gives it a classic and very distinguished profile.
Grape varieties: Syrah 35% - Mourvèdre 30% - Carignan 25%
Grenache 10%
Yield : 21 hl/ha
Terroir : The plots used for this cuvée cover 3 ha on limestone soils. The average age of the vines is 40 years. The climate is cooled by the north winds from the Causse du Larzac, which contribute to the freshness of the wines and balance out its Languedoc generosity.
Cultivation & Harvesting: Certified organic cultivation. Ploughing, organic amendments, controlled grassing, mechanical weeding (intercep), short pruning (gobelet for the carignans and part of the cinsaults, gobelet palissé for the other plots except for one Grenache in cordon de Royat), green harvesting (disbudding, leaf removal), no treatments based on synthetic molecules, biodynamic treatments. Manual harvesting, selection of grapes in the vineyard and on the sorting table in the cellar.
Vinification & Maturing: Vinification with indigenous yeasts, partially de-stemmed grapes, fermentation in stainless steel and concrete vats. Fermentation temperatures are controlled (starting at around 15°C then gradually rising to 25°C). Long vatting periods (30 to 45 days), punching down and
pumping over. Malolactic fermentation on indigenous bacteria in stainless steel tanks. Aging by grape variety and by plot, 12 months in 500 and 600 litre demi-muids (25% new and 75% from 1 to 10 wines) and in
oval tuns of 24 and 30 hl. Blending then additional ageing for 7 months in stainless steel vats before bottling. Stabilisation and clarification by time and cold.
Tasting: Great vintage on the horizon! Deep, racy nose, where the mineral density of the terroir is expressed. The palate offers that extra length and energy so typical of Combariolles, which gives it great elegance despite the intensity of the material. Very nice juicy fruit carried by very fine tannins.
