The oxidative process is pure: a straight and delicate profile, without concession or austerity in this chiselled white, marked by great freshness. The tension and precision of the flavours, almost crystalline, will carry it gracefully through the ages. Ihe has an extravagant dry extract, a breadth of taste with extraordinary persistence.
The Macle estate, taken over in 1995 by Laurent Macle, is located in Château-Chalon on 12 hectares of vines, 8 of which are planted with Chardonnay in the AOC Côtes du Jura and 4 planted with Savagnin in the AOC Château-Chalon.
The vineyard is planted on a steep hillside (50% slope) of blue marl covered with limestone scree, indicating the determination and passion of this family to ensure that the quality of each of the vintages is exceptional.
The Vin Jaune is the only wine to develop so many aromas as it ages.
A golden yellow colour.
The palate gains in fullness with notes of nuts and apples, with fatness and length. We consider it to be one of the greatest wines in the world!
Organic viticulture since 1966.
Aged in the 16th century cellars, in Burgundy oak barrels for a minimum of six years and three months in oak barrels without racking or topping up
