La Déchirée
La Déchirée is a very atypical Apremont made from a plot of land on the hillside at the top of Apremont and surrounded by thorns (blackberry, raspberry).the grapes are harvested when very ripe, resulting in a powerful wine with a myriad of original, complex aromas. A very deep wine filled with a beautiful minerality underlined by a nice fatness in the middle of the mouth.

Soil/terroir
steep limestone hillside at an altitude of over 350 metres, facing south/south-east
Cultivation method
Permanent working of the soil, no chemical weedkillers, pesticides or insecticides, regular grassing and ploughing. No search for certification, simply to get the quintessence of the grape variety and the terroir
Manual harvesting with an important sorting at high maturity or even over-ripeness
Vinification
Slow pneumatic pressing, strict settling. After vatting, the alcoholic fermentation takes place slowly thanks to indigenous yeasts
Ageing
Only in vatson fine lees
