Roussette is made from the Altesse grape variety. It is a racy, tender and supple wine with a remarkable bouquet of finesse. It goes wonderfully with freshwater fish.
This Roussette "Altesse" has a beautiful acidity in attack, then power and delicacy confer a persistence in mouth. On the nose, a little violet after aeration, smoky and fruity on the palate.
This Roussette can be drunk or kept for a few years to gain in roundness for 5 to 7 years.

Aged for almost a year in casks and stored for a year after bottling.
All the grapes are harvested by hand, then pressed and the fermentation starts with the yeasts present on the grapes, without any external addition. Very little sulphite is added.
These choices of vinification and maturation give body and aroma to this wine and this natural wine is even more expressive after a few years of cellaring.
