Mineral and floral nose with notes of chalk, damp earth, honeysuckle and jasmine, followed by notes of white fruit. Concentrated and persistent on the palate with a saline minerality very rich in dry extracts. The finish is powerful and very long. An exemplary Chassagne-Montrachet Les Caillerets which will magnify itself over the next 15 years. A very great wine.

"Implanté à Chassagne-Montrachet, le domaine Paul Pillot possède une belle série de chassagne-montrachet villages et de premiers crus dont une magnifique Romanée, des santenays et des saint-aubin, soit au total dix-sept appellations. Thierry Pillot a rejoint le domaine en 2007.
Aujourd’hui seul aux commandes, en rupture avec le style de son père, il est adepte pour ses blancs d’un usage modéré du fût neuf (10% au maximum) avec des élevages plus longs que par le passé. Il pratique de longs pressurages, pas de débourbage ni de bâtonnage, avec une utilisation a minima du soufre.
Il travaille selon les principes de l’agriculture biologique sans chercher à être labellisé. En blanc comme en rouge, ce domaine produit des vins sans artifice, raffinés et intenses, épurés sans pour autant être maigres, rendant hommage à la personnalité de chaque terroir." 2* RVF Guide
