Grape variety: 100% Pinot Noir.
Years of plantation: 50% in 1979, and 50% in 1987.
Vineyard: The vines are cultivated without pesticides or insecticides, and the only input, the manure, is of natural origin. The soil is worked, without weedkillers, to maintain the aeration and flexibility of the soil.
Vinification: Hand-picked in small boxes, sorted in the vat room, 100% destemmed. Cold maceration for 7 days, regulation of the fermentation temperature, two punchings down per day, vatting for 21 days.
Aging: On the lees in oak barrels (30% new) for 18 months, natural and late malolactic fermentation, without fining or filtration, racking and bottling by gravity.

"Géré depuis 2001 par le duo sœur-frère Claude et François de Nicolay, celui-ci s'étend sur près de 14 hectares intégralement conduits en biodynamie depuis 2005. Les vinifications sont des plus traditionnelles : raisins entiers, températures de fermentation n'excédant pas 30°C, et pas ou très peu de bois neuf.
Un trio de conditions qui résume l'identité des vins, dont l'extraction colorante est aussi limitée que leur expression est intensément florale et raffinée.
