A philosophy that also inspires them to plant non-grafted vines, free-standing for ten years (following the plantings of Charles Joguet in the 1980s), and to establish themselves on new forgotten terroirs, such as the excellent Clos Guillot in Chinon. Their Croix Boissée (clay-limestone terroir in Cravant-les-Coteaux), built for ageing, has an extra velvety and sometimes sweetness in hot years, which is not to be disliked by great lovers of Saint-Émilion wines. Dominique Ay produces on a very beautiful terroir with clay-limestone soils the archetype of a very beautiful Gigondas, full, pulpy, with a tight structure that requires at least 5 to 6 years of cellaring to express itself. Note that this Gigondas Raspail Ay shows a flawless consistency over the vintages, the secret of this success being partly due to the fact that the estate produces only one cuvée, and it is aged in large tuns for at least 24 months. Installé à Tavel dans le Gard, Romain le Bars est un vigneron nature qui progresse de millésime en millésime et dont les vins sont déjà très recherchés. Il a eu le privilège de travailler près de 7 ans chez le grand et illustre voisin Eric Pfifferling, vigneron du domaine de l’Anglore. Après cette expérience, Romain Le Bars se lance en 2018 avec 1,20 hectares de vignes, et un tout petit chai dans son garage. Son vignoble est composé aujourd’hui d’une bonne dizaine d’hectares avec un chai un peu plus grand.

Peut-être l'un des plus vieux cépages au monde, l’Areni est présent en Arménie depuis des millénaires. Jamais greffé, en sélection massales, il est 100% autochtone et possède un profil d'ADN unique qui ne correspond à aucun autre. Extrêmement résistant aux maladies et à la peau très épaisse, l’Areni Noir a développé la capacité unique de s’adapter parfaitement au climat extrême de Vayotz Dzor, son habitat naturel. Ce cépage est également le résultat d’une sélection méticuleuse par le domaine Zorah, à partir de vieilles vignes abandonnées d’un complexe monastique du XIIIe siècle.

Engagé dans une démarche de conversion bio, le domaine a accueilli Marie, l'une des filles du vigneron, en 2020, renforçant ainsi sa tradition familiale et son engagement envers la qualité et le respect de l'environnement.
