La Folle Noire d'Ambat
Very nice négrette, well controlled, fresh and pleasant. A delicious wine for friends.
With its bright, burlat colour, this wine has a nose of black cherries and delicate flowers. The palate, surprisingly full of character, does not cheat. The aromatic intensity is accompanied by very velvety tannins. This cuvée calls for nibbling, sausage making and is remarkably conversationally supportive.
The plots are planted at a density of 5,000 vines per hectare, on a particular terroir of boulbènes of the "rouget" type on the surface, and clays rich in iron oxides at depth.
The yield is 50 hl/ha.
The wine is put into vats by gravity and lightly crushed.
The Négrette is vinified in the traditional way for about 2 weeks.
The wine is vinified in small, open vats, which allows for better temperature control (25 to 28°C).
The wine is aged for 8 to 10 months in 20 hl tuns
