Bienvenues-Bâtard-Montrachet Grand Cru
Le Bienvenues-Bâtard se montre assez gras, profond et harmonieux mais sans la moindre lourdeur, porté par un souffle impérieux qui électrise la finale. La justesse de définition des saveurs et la persistance signalent un très grand vin.
Terroir : argilo-calcaire constitué de cailloutis. Pente moyenne. Une “montagne” assez plate et aride de l’ancienne forme “ Mont Rachet ” (“mont chauve”) devenu au fil du temps Montrachet. Plantée en 1977 la vigne expose ses rangs au soleil levant.
Vinification et élevage : pressurage au pressoir pneumatique en grappes entières pendant 2h30. Débourbage pendant 12h, puis élevage de 16 mois en fûts et 2 mois en cuve inox. Pourcentage de fûts neufs : 30%.
Accords mets/vin : oeufs brouillés au saumon fumé, soufflé au brochet, chapon au vin blanc.
