Chêne Marchand in Magnum, still at the top of the great Sauvignon de terroir, still in its gangue, it will unfold all its complexity over time. In this vintage, one of the most prized in the Sancerre region, the Sauvignon is always more restrained, displaying a fine austerity in its youth. But it conceals a large-scale material carried with élan and power towards a chalky finish. A great white wine for laying down.

Lieu-dit: Vieille Vigne du Chêne Marchand. Plot selection in the village of Bué.

Surface area: 2 ha approx

Soil: Caillottes, Sancerrois limestone

Subsoil: Limestone

Age of the vines: 40 years

Planting density: 7000 vines/ha

Vine training: Guyot pruning

Viticulture

Cultivation : No weedkillers, vines are grassed and the soil is worked under the foot

Treatment strategy: organic approach (no insecticides, no acaricides, no anti-rot products...)

Yields: 45 hl/ha

Disbudding: green harvesting

Vinification

Manual harvest with a first sorting of the grapes

Vibrating sorting table : no screw at the reception of the grapes allowing to press the grapes whole, not crushed, pneumatic pressing

Fermentation and maturation : Aged in 4 barrels, 2 of which are new, and in stainless steel tanks

Tasting temperature :

12-14°

The Estate

Based in Bué, the Pinard family, now led by Clément and Florent but still under the watchful eye of their father Vincent, is continuing its spectacular progress towards excellence, with organic farming and a demanding desire to transcribe each specific terroir as well as possible.
The Sauvignon parcels are now at an exceptional level, neck and neck with two or three other estates in the appellation.
The Pinot Noir still has no equivalent... and remains a very rare item...
