In order to produce this brut, the young vines are used, on the terroirs of the Bournais (silty plateau), the light, spring-like and greedy character being perfectly adapted to this type of cuvée.
The aromatic range is dominated by a brioche character with vinous nuances of green apple, citrus fruit and white peach which balance the whole.

In the cellar
A pressure of 5 bars is necessary to obtain the traditional method. The wine is matured in cellars on laths for about 2 years in cellars at 13°c ensuring a slow fermentation and the development of a very fine bubble.
