Ce Vouvray Méthode Traditionnelle Extra Brut dégage des arômes dominés par des notes briochées, tout en présentant des nuances vineuses de pomme verte, d'agrumes et de pêche blanche qui contribuent à équilibrer l'ensemble.

Terroir : jeunes vignes plateaux limoneux.

Vinification : une pression de 5 bars est nécessaire pour obtenir la méthode traditionnelle. Le vin est élevé en caves sur lattes pendant environ 2 ans dans des caves à 13°c assurant une fermentation lente et le développement d'une bulle très fine.

Accord mets/vin : à l'apéritif, brioche vendéenne, cake aux fruits confits.

"Une poignée des meilleurs vignerons du Languedoc, hélas trop peu, redécouvrent les vertus du cinsault, un vieux cépage dont on a fait des citernes de rosés, au demeurant parfois bons. Vinifié en rouge, c'est assurément le vin de soif par excellence et sa buvabilité hors pair peut se conjuguer, quand il est bien traité, à une profondeur étonnante.
 
Jean-Baptiste Granier en fait l'une des versions les plus excitantes, cultivant en virtuose une petite dizaine d'hectares depuis ses débuts en 2007, propulsé par un certain Olivier Jullien.
 
Finale délicieuse, florale, sur les fruits rouges, la réglisse : la similitude de sensations tactiles avec les grands pinots noirs de Bourgogne est évidente. Il a tout d'un grand, sauf le prix.
 
La grande cuvée, en terrasses-du-Larzac, n'est tombée dans aucun des pièges classiques, surmaturité ou surextraction, elle est en route vers les modèles du genre. Le blanc s'affine à chaque nouveau millésime." 3*/5 Bettane+Desseauve

Very nice Vouvray, biodynamic and at angelic prices... The Domaine Vigneau Chevreau is composed of 26 hectares. The vines are located in 3 communes of the Vouvray appellation and are biodynamic. The wines are aged in troglodyte cellars of tuffeau, ideal for the maturing and to preserve the production.
