Vinification
The entire plot is harvested with the two grape varieties, which are vinified together in stainless steel vats first, then the wine is aged in 25hl tuns. The wine is then racked into 500 litre barrels, the barrels are filled but not topped up.
Before bottling, each barrel is tasted and blended. The vinification and ageing of the two grape varieties together accentuate the minerality and salinity. This wine expresses a superb harmony.
