Yield
40 to 47 hl/ha. Harvesting is done at the right time of ripeness, favouring a healthy harvest and a good alcohol-acidity balance.
Vinification
The whole bunches are pressed using a pneumatic press. A 12-hour settling period follows the pressing. Alcoholic fermentation takes place in stainless steel vats between 18°C and 21°C.
