Les Vignes Métissées
Un rosé très original, d'une pureté exemplaire. Il revêt une robe pâle avec de légers reflets gris. Le nez est charmeur sur des notes d'agrumes, de thé au jasmin, de violette, de verveine et de citronnelle. En bouche, l'entame est charnue, fruitée avec une certaine tension saline. On sent également des saveurs de groseille, rhubarbe et orange. A déguster d'urgence.
Marjorie Gallet, la vigneronne : "Discrètes effluves de fleurs et d'agrumes en fermentation, une robe délicatement rosée, pour une bouche terriblement saline et minérale et un vin déroutant. Ni blanc, ni rosé, juste magnifiquement métissé."
Terroir : parcelles de cépages blancs, gris et noirs de 1963 à 2011. Sols composés de schistes. Les vendanges sont manuelles, et la culture bio.
Vinification : Fermentation avec levures indigènes. L'élevage se fait durant 7 mois en foudre, vieux fûts de 500 L et 228 L. Tout est cueilli ensemble, à maturité des blancs. Le jus obtenu est rose très pâle.
Accord mets/vin : apéritifs, entrées légères.
