Les Varrons présente une clarté dans sa robe et offre un nez généreux caractérisé par des notes de fruits jaunes, de camomille et de vanille. La bouche, charnue, se prolonge agréablement avec une touche saline. Excellent potentiel de vieillissement.
Terroir : Chardonnay, ancienne sélection massale. Plantation de 1947 à 1967. Sols d'argile en décalcification sur calcaire Bajocien.
Vinification et élevage : vinification sans intrant puis élevage de 20 mois en fûts de 350 & 228L.
Accords mets/vin : filet mignon au foie gras, médaillon de veau, lapin chasseur.
