
Sauvignon Blanc
The grapes come from four different parcels. In order to preserve their individual characteristics, the grapes from each plot are fermented separately. 3 weeks of fermentation, accompanied by stirring and resting on the lees for 2 months, give the wine complexity. Hartenberg Estate:
Located in the Bottelary Hills, 12 kilometres north of Stellenbosch and 40 kilometres northeast of Cape Town, Hartenberg Estate is owned by Fiona Macenzie and Tani Browne. The vineyards face due north on multiple terroirs: 9 different soil types and microclimates with a Mediterranean influence. The grape varieties are Sauvignon Blanc, Riesling, Chardonnay, Merlot, Cabernet Sauvignon, Syrah and Pinotage. The estate is nicknamed "the house of unhurried wine", due to the late flowering of its vines. Carl Schultz graduated from the University of Elseburg in 1988 and has been in charge of the winemaking since 1994. He has travelled to the most important wine estates in Tuscany and France, especially in the Rhone region, to pursue his passion for Syrah.
