Le Monfarina du Domaine Giachino illustre à merveille la fraîcheur et la pureté montagnarde des vins de Savoie. La robe, d’un jaune pâle cristallin aux reflets argentés, annonce un vin droit et lumineux. Le nez est d’une grande délicatesse : fleurs blanches, pomme verte croquante, zeste de citron, et une touche de pierre à fusil typique des terroirs alpins. En bouche, la texture se montre tendue et élancée, portée par une acidité vive et une minéralité salivante. L’ensemble est précis, digeste, et s’étire sur une finale citronnée, légèrement salée, d’une grande pureté aromatique. Un vin qui respire l’altitude et la sincérité.

Terroir : vignes de Jacquère plantées sur des éboulis calcaires et moraines glaciaires.

Vinification et élevage : pressurage doux des raisins entiers, fermentations spontanées en cuves inox, puis élevage sur lies fines pendant plusieurs mois sans aucun artifice. Aucun bois, aucune chaptalisation.

Accords mets/vin : raclette, risotto au citron et aux asperges vertes, fromages alpins frais (tomme, sérac, chevrotin).

The Estate Giachino

The vineyard of the brothers David and Frédéric, the Giac brothers as they are known, is made up of about ten hectares overlooking the Isère valley. The estate has been certified organic since 2008 and has been committed to biodynamic viticulture since 2013, with vinification using indigenous yeasts and no sulphur except at bottling. The result is wines of exemplary freshness and purity, easy to digest, that the informed wine lover will be quick to taste, particularly the Persan, which is without doubt the reference in the sector for this grape variety...
