The black elder or elderberry is one of the most common shrubs in Central Europe. The fresh, fruity scent of its small white flowers, which appear in early summer, is immediately recognisable. These turn into berries that are first red, then black and shiny, giving a burgundy-coloured juice.
Elderberries are not edible raw and can only be eaten after cooking or fermentation. The flowers and berries are rich in vitamin C and are used to produce many juices, syrups, herbal teas and jellies. The brandy from these ripe berries is a particularly sought-after speciality.
This black elderberry comes from Lower Austria where it is grown under optimal climatic conditions and without any treatment. The berries are picked by hand when fully ripe and macerated on the same day at the grower's.
The 100% natural berry mash is distilled very gently twice in a copper still. The noble toast (up to 55 kg of berries are needed to make 1 litre of brandy) is then aged for a minimum of ten years to reach its fullness. The alcohol loses its strength and power over the years, giving way to the delicate fruity aromas of dark berries, underlined by unctuous notes of spices and chocolate.

- Slow, delicate distillation in the Tyrolean tradition of double distillation. Up to 80 kg of fruit are needed to produce 1 litre of the famous "coeur de chauffe"
- Give it time with extended ageing to obtain fully developed eaux-de-vie. Once distilled, these eaux-de-vie are aged for many years in order to develop the unique harmony and aromatic expression that characterise them
