Un liquoreux exceptionnel, trié précocément au sein des grappes de chenin sec, pour un équilibre sucre-acidité fantastique, le sucre résiduel est de 243g/L. Deuxième millésime produit après 2017.
Terroir : Coteaux du Layon Faye, Chenin atteint de botrytis.
Vinification et élevage : vendange précoce de pourriture noble apparue sur quelques grappes à la suite des orages d’avant vendange. Pressurage lent, pressoir manuel, fermentaion en une barrique et une dame jeanne de verre.
Accords mets/vin : magret de canard au miel écrasé de patates douces, tarte aux myrtilles.
