Mondeuse Black Giac
La robe est d’un rouge profond aux reflets violacés. Le nez s’ouvre sur des arômes intenses de fruits noirs frais (mûre, myrtille, cassis), accompagnés de notes poivrées et légèrement fumées, typiques du cépage . En bouche, l’attaque est vive et dynamique, portée par une belle acidité. Les tanins sont présents mais bien intégrés, on retrouve les fruits noirs du nez, rehaussés par une pointe d’épices et une touche végétale rafraîchissante. La finale est persistante, avec une belle tension qui appelle la gourmandise.
Terroir : sols argilo-calcaires et argilo-limoneux.
Vinification et élevage : fermentation en cuve inox à température contrôlée . Élevage en cuve pendant plusieurs mois.
Accords mets/vin : terrine de gibier, sauté de veau aux champignons, magret de canard rôti, sauce au vin rouge.
