Vino Di Gio - Rouge
Le rouge Vino di Gio est concentré et velouté, d'une matière riche mais gardant de la fraîcheur et une trame subtile. De la puissance, de la race et de l'élégance, sans surenchère.
Terroir : galets mélangés à un sable très clair (poudingue). Exposition Sud Sud-Ouest.
Vinification et élevage : vendange manuelle, raisins ramassés à l’optimum de leur maturité et soigneusement triés. La vinification s’effectue en cuve inox avec pigeage manuel, la durée de cuvaison pouvant aller jusqu’à 30 jours. La mise en bouteille intervient après 12 à 16 mois d’élevage en fûts de chêne Français sans collage, ni filtration.
Accords mets/vin : coq au vin, aubergines farcies, grillades.
