The "L'Olivette" cuvée comes from vines planted on former olive groves. These vines give rise to a wine that evolves surprisingly towards aromas of black olive, tapenade and garrigue. It is a fine and tender wine built on balance, with a nose of black fruits, spicy and liquorice notes, firm tannins and a beautiful generosity.

With its rich Grenache grapes, complemented by Syrah and Cinsault, Olivette is a sure bet with a very fine grain of tannin.

Olivette is a blend of Grenache and Syrah, complemented by Mourvèdre and Cinsault. The vines are worked according to biodynamic principles and the grapes are always harvested by hand. The wine is aged in barrels.

A little history of the estate:
For just over ten years, Christophe Peyrus, one of the most brilliant winemakers in the Languedoc, has been working on 20 hectares. On Clos Marie, as on the other properties of the Pic, three grape varieties are king: Grenache, ancestral in the Languedoc, Syrah, introduced in the 1960s and Mourvèdre, which only appeared in the 1980s.
For Christophe Peyrus, thinking about wine is above all a reflection on the vine. This is why he has definitely chosen to plough the vineyard, to harvest by hand and to progressively switch from integrated vineyard management to biodynamic viticulture. It is indeed this attention to the plant material, combined with a great deal of know-how in the cellar, which enables him toit is this attention to the plant material, combined with a great deal of know-how in the cellar, that has enabled him to produce four red wines, one white wine and one rosé de saignée, each of which is of great elegance in its own category.
Although the age of the vines plays a role in the allocation of the grapes to the different cuvées, it is above all the terroir that Christophe Peyrus wants to express. If the work in the vineyard is primordial, the work in the cellar is no less meticulous, down to the smallest detail, from the scrupulous choice of corks to that of the barrels. The maturing process is long and the wine bears witness to the intensity of the care that goes into making it.

"Ce domaine phare du Pic Saint-Loup est mené de main de maître depuis 1995 par Christophe Peyrus. Figure de l'appellation, le vigneron cultive 22 hectares. Salués pour leur intensité, leur finesse, leur chair et leur distinction, les vins du domaine ne font pourtant pas l'unanimité car certains amateurs sont gênés par les acidités liées à des choix de faible protection des vins.

"Une poignée des meilleurs vignerons du Languedoc, hélas trop peu, redécouvrent les vertus du cinsault, un vieux cépage dont on a fait des citernes de rosés, au demeurant parfois bons. Vinifié en rouge, c'est assurément le vin de soif par excellence et sa buvabilité hors pair peut se conjuguer, quand il est bien traité, à une profondeur étonnante.
 
Jean-Baptiste Granier en fait l'une des versions les plus excitantes, cultivant en virtuose une petite dizaine d'hectares depuis ses débuts en 2007, propulsé par un certain Olivier Jullien.
 
Finale délicieuse, florale, sur les fruits rouges, la réglisse : la similitude de sensations tactiles avec les grands pinots noirs de Bourgogne est évidente. Il a tout d'un grand, sauf le prix.
 
La grande cuvée, en terrasses-du-Larzac, n'est tombée dans aucun des pièges classiques, surmaturité ou surextraction, elle est en route vers les modèles du genre. Le blanc s'affine à chaque nouveau millésime." 3*/5 Bettane+Desseauve
