L'Olivette
The "L'Olivette" cuvée comes from vines planted on former olive groves. These vines give rise to a wine that evolves surprisingly towards aromas of black olive, tapenade and garrigue. It is a fine and tender wine built on balance, with a nose of black fruits, spicy and liquorice notes, firm tannins and a beautiful generosity.
With its rich Grenache grapes, complemented by Syrah and Cinsault, Olivette is a sure bet with a very fine grain of tannin.
Olivette is a blend of Grenache and Syrah, complemented by Mourvèdre and Cinsault. The vines are worked according to biodynamic principles and the grapes are always harvested by hand. The wine is aged in barrels.

A little history of the estate:
For just over ten years, Christophe Peyrus, one of the most brilliant winemakers in the Languedoc, has been working on 20 hectares. On Clos Marie, as on the other properties of the Pic, three grape varieties are king: Grenache, ancestral in the Languedoc, Syrah, introduced in the 1960s and Mourvèdre, which only appeared in the 1980s.
For Christophe Peyrus, thinking about wine is above all a reflection on the vine. This is why he has definitely chosen to plough the vineyard, to harvest by hand and to progressively switch from integrated vineyard management to biodynamic viticulture. Although the age of the vines plays a role in the allocation of the grapes to the different cuvées, it is above all the terroir that Christophe Peyrus wants to express. If the work in the vineyard is primordial, the work in the cellar is no less meticulous, down to the smallest detail, from the scrupulous choice of corks to that of the barrels. The maturing process is long and the wine bears witness to the intensity of the care that goes into making it.
