Le Chardonnay Les Graviers présente une robe or pâle brillante, aux reflets verts délicats. Le nez est complexe et raffiné : citron confit, pomme verte, poire croquante, rejoints par des notes de fleurs blanches, d’amande fraîche, de pierre à fusil et un léger beurré discret. En bouche, l’attaque est vive et tendue, portée par une acidité ciselée et une texture minérale. La matière est ample mais précise, avec un équilibre subtil entre fraîcheur, salinité et un léger gras issu de l’élevage. La finale, longue et vibrante, s’étire sur des notes citronnées et crayeuses, typiques de ce terroir. Un vin profond, élégant et droit, qui combine puissance et finesse.
Terroir : sols graveleux calcaires du nord d’Arbois.
Vinification et élevage : vendanges manuelles. Vinification naturelle, avec fermentations spontanées aux levures indigènes. Le vin est ouillé (fûts régulièrement complétés) afin d’éviter l’oxydation. Élevage en fûts de chêne, dont une faible proportion de bois neuf.
Accords mets/vin : turbot rôti, quenelles de brochet sauce Nantua, beaufort.

The Estate Stéphane Tissot
The Domaine André et Mireille Tissot of Bénédicte and Stéphane Tissot was created in 1962 and is located in Montigny-les-Arsures, a small town close to Arbois, the capital of Jura wines. Stéphane Tissot and his wife Bénédicte officially took over the estate in 1990.
Convinced of the benefits of the cleanest possible cultivation, the talented winegrower has endeavoured since the beginning to convert all his vines to organic cultivation (certification in 1999) and then to biodynamic cultivation since 2004, on the 50 hectares that make up his vineyard. The production of his own compost, the use of various herbal teas, everything is done to give the vines new vigour in order to bring out all the minerality of the terroir.
Because apart from his desire to produce natural wines, far from all the stereotypes of France and Navarre..., Stéphane Tissot's ambition is above all to give his wines their full dimension and to reveal the best of these magnificent Jura terroirs

As a highlight, Stéphane Tissot has created the Clos de la Tour de Curon cuvée, produced on a parcel of 72 ares of completely cleared, south and south-west facing Bajocian limestone scree. A micro-cuvée that demonstrates once again that it is possible to produce jewels on this Jura land.
