New cuvée Orion Alpha (a first in red for Pierre Ménard) with this 100% Cabernet Franc on schist with a clay layer on the surface
Orion Alpha (named after the Alpha star of the Orion constellation) is made from 2 parcels of the same size, 10 years old (close to the cellar) and 70 years old (a little lower down the slope of Clos des Mailles). The soil is more favourable to Cabernet Franc, with this thickness of soil on the schist, which is essential for the good ripening of the Cabernets, which do not like excessive dryness.
The grapes are destemmed by hand and then macerated for 3 weeks, with only one punching down at the beginning to open the berries, with only a very regular moistening of the cap for an infusion without too much extraction. After pressing and malo, the wine is racked into barrels of 2 and 3 wines, one racking per blend in the spring, then a second racking for bottling at the end of August, without filtration or fining.
