Macvin
Fabriqué depuis le 14°siècle le Macvin est un vin de liqueur obtenu à partir de jus de raisin non fermenté (deux tiers environ) auquel on a ajouté un tiers de Marc du Jura.
Vin muté 1/3 Marc 2012 et 2/3 Jus raisin 2018. Elevage de 5 ans
Les marcs sont issus de notre vendange, ils sont distillés par nos soins dans un ancien alambic à repasse. Titrant au minimum 52%, les Marcs vieillissent deux ans en fût avant assemblage avec le jus de raisin. Le Macvin est ensuite élevé au moins 18 mois en fûts de chêne de 228 litres.
Il titre de 17 à 18 %, on le boit principalement frais en apéritif. Il est aussi apprécié, après un vieillissement plus ou moins long, avec des desserts au chocolat noir amer.
