Le Champon se révèle par des arômes fruités et épicés au nez. En bouche, il se distingue par sa vivacité, son équilibre, et une structure tannique magnifique. D'une élégance remarquable, ce vin est élaboré avec un profond respect pour son terroir. Avec le temps, il dévoilera encore davantage de ses charmes.
Terroir : vignes âgées en moyenne de 40 ans. La densité de plantation est de 7.000 pieds/ha. Le vignoble est conduit selon une culture raisonnée.
Vinification et élevage : vendanges manuelles avec un triage à la parcelle et à la table de tri à l'entrée de la cuverie. Vinification en cuves béton thermorégulées avec l’utilisation de levures indigènes puis élevage en cuves béton.
Accords mets/vin : viande rouge, gibier, viande cuite au barbecue, fromages.
