The winemaker :
Wilfried Vallat first worked as a University student in Biochemistry before turning to oenology in 2004.
Trained in Burgundy, passing through Meo-Camuzet, Clos Salomon and Domaine Joblot, he took over the 5 ha vineyards in Calce, Gauby's playground, in 2007.
The work in the vineyard is consequent, minimising human action during the vinification, for an optimal result respectful of organic viticulture.
