Mercurey
Un Mercurey village plein de vivacité provenant de jeunes vignes. Un exemple remarquable de savoir-faire et un superbe pinot noir bourguignon, simple et élégant.
Terroir : jeunes vignes.
Vinification et élevage : raisins soigneusement sélectionnés et triés puis égrappés et transférés dans les cuves où la fermentation alcoolique se déroule pendant environ 15 à 18 jours, avec des pigeages quotidiens. Température minutieusement contrôlée (système de refroidissement ou de réchauffement selon les besoins). Le jeune vin est ensuite placé en fûts de chêne, dont 25 % sont neufs, pour un élevage d'environ 12 mois.
Accords mets/vin : terrine de canard, blanquette de veau, pot au feu.
