The bouquet expresses itself on animal and spicy notes, of undergrowth and prune, evolving with age towards musk, leather, fur, mushroom. In its youth, the aromas often evoke rose, violet and fresh cherry. On the palate, the attack is lively, the balance pleasant with supple tannins and a tasty roundness. The density of its texture and its tight texture are fully developed after 6 to 7 years of ageing.
Its power and fullness call for matching wines of the same range. The square structure of virile tannins imposes roast lamb, rib of beef and game, both feathered and especially furry. Autumn or winter dishes, with their associated atmospheres, confirm the deep and fleshy personality of this great wine. In addition, fine raw milk cheeses with a washed rind always do them honour.
