Les Varrons - Chardonnay
Provenant d'un sol calcaire distinctif, les vignes de chardonnay qui composent cette cuvée ont été plantées entre les années 1930 et 1940. Le vin qui en découle présente une clarté dans sa robe et offre un nez généreux caractérisé par des notes de fruits jaunes, de camomille et de vanille. La bouche, charnue, se prolonge agréablement avec une touche saline. Excellent potentiel de vieillissement.
Terroir : Chardonnay, ancienne sélection massale. Plantations de 1962 et 1967. Sols d'argile en décalcification sur socle calcaire Bajocien.
Vinification et élevage : vinification sans intrant puis élevage en fûts de 228L.
Accords mets/vin : filet mignon au foie gras, médaillon de veau, lapin chasseur.
