Trousseau "à la dame". Voilà un vin tout en paradoxe, qui enchante par sa floralité, mêlant la finesse de la rose et de la pivoine à celle du pot-pourri et de la fleur fanée. Un Trousseau de référence, très aérien, sur une aromatique fruitée et florale. Julien Labet prouve encore une fois qu'il produit sans doute les meilleurs rouges du Jura.

Terroir : plantation de 2016. Assemblage de 3 parcelles sur les communes de Grusse, Rotalier et Vercia. Terroir chamaré, éboulis, argile et calcaire.

Vinification et élevage : vinifié et mis en bouteille sans sulfite. Élevage de 7 mois en fûts de 228L. Vin sensible à l'air, à boire dès ouverture.

Accords mets/vin : côte de boeuf, morbier, gibier.

"Julien Labet, with the help of his brother and sister, has taken over his father Alain's vineyards, which are now grouped together under a single entity: Domaine Labet. (...) Numerous micro-parcels (between 15 and 80 ares, often from old vines) are vinified by Julien, both in white (all ouillés) and in red, the latter being perhaps the most exceptional to be born today in the region.
