Les Varrons Vieilles Vignes de Jean-François Ganevat est un vin blanc de grande stature, d’une élégance remarquable. Sa robe or pâle aux reflets lumineux annonce un vin à la fois frais et dense. Au nez, il libère des arômes de pêche blanche, de coing mûr, d’agrumes confits, associés à une belle touche saline et une sous-note de fruits secs qui évoque noisette et amande. En bouche, il séduit par une texture ample, presque opulente, mais toujours portée par une fraîcheur vibrante ; l’acidité, fine mais présente, donne au vin une belle tension, tandis que la finale se prolonge sur des notes minérales persistantes et un soupçon d’épice douce. Tout cela fait de cette cuvée une expérience sensorielle riche, expressive et très représentative du style naturel et audacieux de Ganevat.
Terroir : lieu-dit Les Varrons, coteau exposé à l’est, à environ 250 mètres d’altitude. Le sol est un argilo-calcaire mêlé de marnes rouges, riche en argiles et oxydes de fer.
Vinification et élevage : vinification naturelle, sans ajout de soufre, en utilisant exclusivement les levures indigènes pour déclencher la fermentation. Les raisins sont vendangés à la main, et la vinification se fait sans collage ni filtration pour préserver la matière et la complexité aromatique. Ensuite, l’élevage dure trois ans, d’abord en demi-muids, puis en cuves, toujours sur lies fines.
Accords mets/vin : risotto aux champignons sauvages, poulet fermier rôti, sauce à la crème et fines herbes, comté de 24-36 mois.

The Estate Jean-François Ganevat
Jean-François Ganevat, known as Fanfan, returned to his roots in 1998, to the Combe de Rotalier, after having been cellar master at the Domaine Morey in Chassagne Montrachet. Each year he makes around forty cuvées from parcel selections of 25 different grape varieties on 9 hectares of clay, schist and marl, with very old vines, 80 years old for the yellow one and a hundred years old for others.
He began by applying an organic practice which led him to a biodynamic culture in 2006 in order to achieve his objective of making wines as natural as possible, without sulphur, vinified with indigenous yeasts.
Concentrated, racy, of great purity, long, broad, salivating, there is no shortage of adjectives to describe the wines of Jean-François Ganevat, which regularly reach the top in whites for the Chardonnay and Savagnin varieties, whether or not they are oaked, such as Grandes Teppes, Chalasses Marnes Bleues or in reds with his famous Trousseau.
As proof, the cuvée "les chalasses vieilles vignes de 1902" vintage 2011 was elected wine of the year in 2014 by the very respected guide Bettane et Desseauve, no less!
