Le Chardonnay Les Chalasses Vieilles Vignes est un vin de haute intensité minérale, puissant et pur, qui allie l’ampleur à la tension verticale du terroir de marnes bleues. La robe est jaune paille lumineuse, légèrement trouble, reflet d’un élevage naturel sans filtration. Le nez est d’une grande finesse, expressif mais sans exubérance, marqué par des arômes de zeste de citron, fleurs séchées, fruits blancs mûrs, puis de pierre à fusil, beurre frais, noisette, et épices douces. On perçoit également des notes de craie humide, infusion de plantes et de sève, avec une sensation de pureté rare. En bouche, le vin déploie une matière ample et serrée, avec une acidité droite, une texture saline et crayeuse, et une finale d’une grande allonge, évoquant le calcaire et les agrumes confits. Le vin allie profondeur, droiture et énergie, sans lourdeur, avec une sensation presque vibratoire. Une cuvée de grande garde, à la fois puissante et ciselée, digne des plus grands blancs de terroir.

Terroir : marnes bleues très compactes.

Vinfication et élevage : vinification 100 % naturelle, sans intrants ni soufre ajouté. Pressurage lent, fermentation par levures indigènes. Le vin est ouillé et élevé environ 30 mois en demi-muids anciens, sur lies, sans bâtonnage. Aucun collage ni filtration. Une cuvée mise en bouteille sans soufre ou avec une dose minimale.

Accords mets/vin : saint-Jacques au jus réduit, volaille de Bresse à la crème, gratin de cardons au vieux comté.

The Estate Jean-François Ganevat

Jean-François Ganevat, known as Fanfan, returned to his roots in 1998, to the Combe de Rotalier, after having been cellar master at the Domaine Morey in Chassagne Montrachet. Each year he makes around forty cuvées from parcel selections of 25 different grape varieties on 9 hectares of clay, schist and marl, with very old vines, 80 years old for the yellow one and a hundred years old for others.

He began by applying an organic practice which led him to a biodynamic culture in 2006 in order to achieve his objective of making wines as natural as possible, without sulphur, vinified with indigenous yeasts.


Concentrated, racy, of great purity, long, broad, salivating, there is no shortage of adjectives to describe the wines of Jean-François Ganevat, which regularly reach the top in whites for the Chardonnay and Savagnin varieties, whether or not they are oaked, such as Grandes Teppes, Chalasses Marnes Bleues or in reds with his famous Trousseau.

As proof, the cuvée "les chalasses vieilles vignes de 1902" vintage 2011 was elected wine of the year in 2014 by the very respected guide Bettane et Desseauve, no less!
