Les Grands Teppes Vieilles Vignes est un Chardonnay d’une grande pureté et complexité, marqué par la finesse et l’élégance que lui confèrent ses vieilles vignes. La robe arbore une belle couleur jaune clair aux reflets dorés lumineux, signe d’une belle maturité et d’une grande fraîcheur. Au nez, le vin s’exprime avec intensité sur des notes d’agrumes mûrs, de fleurs blanches, accompagnées de touches minérales et légèrement fumées, révélant la richesse du terroir. En bouche, l’attaque est franche et dynamique, soutenue par une acidité parfaitement équilibrée qui apporte tension et vivacité. La matière est ample et onctueuse, avec une texture soyeuse. La finale est longue, saline et élégante, laissant une impression durable de fraîcheur et de minéralité.
Terroir : terroir argilo-calcaire profond, riche en marnes et calcaires
Vinfication et élevage : la vinification est réalisée en cuves inox, avec un pressurage doux afin de préserver la fraîcheur et la pureté aromatique. L’élevage se fait en fûts de chêne anciens, sans fermentation malolactique.
Accords mets/vin : filet de bar poêlé aux agrumes, suprême de volaille aux morilles, brie de Meaux.

The Estate Jean-François Ganevat
Jean-François Ganevat, known as Fanfan, returned to his roots in 1998, to the Combe de Rotalier, after having been cellar master at the Domaine Morey in Chassagne Montrachet. Each year he makes around forty cuvées from parcel selections of 25 different grape varieties on 9 hectares of clay, schist and marl, with very old vines, 80 years old for the yellow one and a hundred years old for others.
He began by applying an organic practice which led him to a biodynamic culture in 2006 in order to achieve his objective of making wines as natural as possible, without sulphur, vinified with indigenous yeasts.
Concentrated, racy, of great purity, long, broad, salivating, there is no shortage of adjectives to describe the wines of Jean-François Ganevat, which regularly reach the top in whites for the Chardonnay and Savagnin varieties, whether or not they are oaked, such as Grandes Teppes, Chalasses Marnes Bleues or in reds with his famous Trousseau.
As proof, the cuvée "les chalasses vieilles vignes de 1902" vintage 2011 was elected wine of the year in 2014 by the very respected guide Bettane et Desseauve, no less!
