La Bergerie est le nom de cette parcelle, à Montagnac, près de Nîmes. Un très joli parfum de fleur jaune et d'abricot qui mène à une bouche juteuse et piquante, à la fois fraîche et riche. Il y a la magie du Carillon – un vin de succulence et de présence. Il passe un an en vieux chêne, puis est assemblé et mis en bouteille après une nouvelle période en cuve. Vinifié in situ, ce serait un Costières de Nîmes, mais comme il est élaboré à Puligny, c'est un Vin de France.

Terroir : sols argilo-calcaires. 

Vinification et élevage : raisins entonnés dans des fûts de chêne, où les fermentations alcoolique et malo-lactique auront lieu. Élevage en fûts et sur lies, avec de légers dodinages pendant au moins 12 mois, avant d’être soutirés. Puis second élevage en masse d'environ 6 mois pour homogénéiser la cuvée, en affiner l'élevage et l'enrichir.

Accords mets/vin : apéritif, poissons blancs, volaille.

The Estate François Carillon

Since 2010, François Carillon has been running his own estate, which now covers around 14 hectares, mainly in Puligny, Chassagne and Saint-Aubin. The wines are authentic, generous and clean, with minimal doses of sulphites, in total control, crystalline and full of minerality, resulting from a phenomenal work in the vineyard with a very demanding soil work. Already a great reference in Puligny Montrachet, much sought after by wine lovers..
