Bourgogne Rouge
Les Clous comes from several parcels on one of the south-facing slopes of the Bouzeron valley, where in summer the grapes ripen away from the north wind.
Picked and sorted by hand, the grapes are put "whole" on the press. The pneumatic pressing is slow and gentle in order to obtain clear juice without astringency. The must is fermented in oak barrels, vats and tuns, where the temperature is controlled to preserve the freshness and specific aromas of each wine.
As you will see on the label, our Bourgogne Côte Chalonnaise "Les Clous" has become Bourgogne Côte Chalonnaise "Les Clous Aimé". Nothing has changed about the wine, only the name has been changed. The rediscovered "history" of this climate has enabled us to find its original name and thus to specify it. This wine has the same harmony as the Bouzeron: fresh, mineral, fruity and thirst-quenching at the same time, with a full and supple body.
As this wine is matured and vinified as naturally as possible, we recommend that you leave it to rest in the cellar and air it out before tasting.
