The estate's historic wine. Made mostly from old Grenache vines, it is a classic Châteauneuf-du-Pape, very "terroir", with a lot of depth... It smells ofwild strawberries: it is a solar wine, which imposes itself by its solid stature and generous fruit. This Châteauneuf-du-Pape "Clos" has a deep ruby, purple colour, with silky tannins and good acidity.
TERROIR :
The grapes come from a wide variety of sites: Montalivet, La Crau, Les Blachières, Coste Froide, Bois Seneseau, Palestor, Bois Dauphin, Pied de Baud, Les Bousquets, Les Parrans, Les Marines, Le Bois de la Ville, Cansaud, Les Gallimardes and Les Serres. They extend from the north to the south of the appellation.
The soils are mainly composed of quartzite colluvium, marine clay, mollassic sand and sandstone.
ASSEMBLY: 80%Grenache, 10% Syrah, 6% Mourvèdre, 4% Cinsault, Counoise,
Vaccarèse, Muscardin, Terret noir, Picpoul noir.
VINIFICATION:
The vats are filled by gravity with partial destemming. The wines are made without seeking maximum extraction, but rather favouring elegance and freshness.
The free-run juice and press juice are aged separately, mainly in concrete vats where they undergo malolactic fermentation.
After blending, the wine is aged in tuns.

The Estate Clos du Mont-Olivet
The Clos du Mont Olivet was created in 1932 by Séraphin Sabon, and since its origins the family estate has been producing high quality, classic Châteauneuf du Pape on magnificent terroirs, as well as Côtes du Rhône wines of excellent quality.
The vineyard covers 32 hectares, 20.5 hectares of which are used for the Châteauneuf wines, which are made from a large majority of Grenache grapes, while the whites are made from Bourboulenc and Roussanne.
The domain still seems to be unknown in the area. But for how much longer...? The wines of the domain are regularly acclaimed by the finest tasters such as Parker, Bettane & Desseauve, RVF who often place Clos du Mont Olivet among the elite of the region.
The wines are always very deep, rich, imbued with their terroir, ready to stand the test of time. They will begin to peak at 10 years of age and will finish well after 20 years, depending on the vintage, when they will deliver all their aromatic complexity, which is impressive here. The Petit Mont is easier to access because of its constitution and also because of its really angelic price... As for the Côtes du Rhône, they are very good alternatives, providing a maximum of pleasure, like this Varène, which is predominantly Syrah and offers exceptional value for money... Then you may have the opportunity to touch the grail with this Papet cuvée produced only in the best vintages, which is the flagship cuvée of wine lovers.
