Cuvée des Conti
La Cuvée des Conti est l'expression même du sémillon, ramassé très mûr et partiellement passerillé. Il offre une superbe complexité aromatique, et une bouche alliant rondeur et vivacité. Sa robe, d'or pâle, s'accompagne d'arômes aériens et intenses de pêche blanche, d'abricot et de rose. La bouche est ample, dense, avec une belle puissance aromatique. L'excellence du rapport prix-plaisir de la cuvée des Conti.
Terroir : sols argilo-calcaires.
Vinification et élevage : égrappage total. Macération pelliculaire pendant 48 heures. Eclaircissage par décantation naturelle (sans enzymes) à froid (7°C). Fermentation en cuves inox thermorégulées (18°C). Puis élevage sur lies pendant 11 mois. Collage à la bentonite. Filtration minimale.
Accords mets/vin : brochet au beurre blanc, poissons grillés, Cabécou.
