Substance is a Blanc de Blancs champagne made from a solera started in 1986. The solera is a perpetual reserve of wine, each year the wines used for the elaboration of the Substance cuvée are replaced by wines from the last harvest. It is therefore a marriage of more than 20 different years!

The Jacques Selosse Substance is infinitely complex, with a discreet effervescence, and will develop all its qualities if decanted a quarter of an hour before tasting.

Substance is a wine with intense aromas of fruit, flowers and spices. The nose gives off powerful notes of pastry, spices, candied citrus and yellow fruit. Delicate notes of oxidation can be detected due to the solera, a good rancio characteristic of the Jacques Selosse style. After aeration, more greedy touches appear. The palate is very spicy, with a dominant of dried fruits and flowers. The structure is extremely silky, fat, with a substance that coats the mouth, carried by a very marked mineral structure. This is a champagne that should be served at the table, with poultry par excellence and particularly with poularde en demi-deuil.

The Estate Le Clos du Caillou

The Clos du Caillou estate has the particularity of being an enclave adjacent to the Châteauneuf du Pape appellation area. The vineyard is made up of 44 hectares of Côtes du Rhône and 9 hectares of Châteauneuf du Pape, planted for the most part in 1956. It is composed of the 13 grape varieties authorised for the production of a Châteauneuf du Pape, the Grenache grape variety is the majority for the red wines, followed by Syrah, while the clairette rose, the grenache blanc and the roussanne share the majority of the white grape varieties. The soils here are particularly rich, sandy or pebbly, making it possible to produce wines of exemplary aromatic complexity.
All these specificities, gathered at the heart of the Clos du Caillou estate, allow us to offer very high quality Côtes du Rhône wines, such as the magnificent Quartz vintage, which demonstrates the richness of these exceptional terroirs. In addition, Sylvie Vacheron and Bruno Gaspard have been converting the estate to organic farming since 2006. The 2010 vintage was the first to benefit from the organic label (AB), which completes the quality of the work undertaken for decades.
